Mozzarella sticks with sweet tomato salsa

Ingredients
16 oz block whole milk mozzarella cheese
( alternatively you could use tofu or vegan cheese instead )
2 large eggs ( or use vegan egg powder mixed with water )
1 cup italian style breadcrumbs
( for gluten free options this can be taken out or replaced with gluten free bread crumbs )
130 grams of tomato & basil @eatrealsnacks chips
1 cup of plain flour ( or gluten free flour )
salt
freshly ground black pepper
1/2 litres cooking oil
For the tomato salsa:
2 pounds plum or Roma tomatoes, cored and cut into 1-inch pieces
1/2 cup packed dark brown sugar
2 tablespoons apple cider vinegar
1 tablespoon grated peeled fresh ginger (from 1-inch knob)
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1/4 teaspoon red pepper flakes
Instructions
Take three separate bowls, put the flour, bread crumbs and eggs into each bowl and Whisk the eggs.
Blitz the chips in a food processor and add to the bread crumbs ( if using ) mix well.
Cut the mozzarella into 2 inch long batons / sticks
Coat each mozzarella stick in flour then egg and finally coat in the crumb mixture. Repeat until all the mozzarella is coated.
Place the mozzarella sticks in the freezer for 1-2 hours.
In large pan heat 1/2 litre of cooking oil on a medium heat.
Fry the mozzarella sticks for 1 minute or until golden and place the cooked mozzarella on paper a towel to dry any excess oil. Serve immediately
For the tomato salsa
Place the tomatoes, sugar, vinegar, ginger, salt, cumin, paprika, and red pepper flakes in a pan. Bring to a boil over medium-high heat, stirring occasionally with a rubber spatula or wooden spoon
Reduce the heat to medium and gently boil, stirring occasionally, until thick and jammy, about 2 hours. You'll know it's done when you scrape a spoon across the bottom of the pot and no liquid fills in the path. Divide the salsa between 2 (8-ounce) canning jars. Cool, then seal and refrigerate for up to 2 weeks.
